Research confirms the existence of a sixth taste called Oleogustus, the unique chemical signature of fat.

Beyond Texture: The Chemical Signal

For a long time, scientists believed that humans “tasted” fat only through its texture—the creamy, oily mouthfeel we experience when eating butter or fried foods. However, researchers at Purdue University have proven that the tongue possesses specific receptors that respond to the chemical composition of long-chain fatty acids.

Interestingly, unlike the pleasant “creaminess” we associate with fatty foods, pure Oleogustus is reportedly quite unpleasant. In its concentrated form, it tastes rancid or bitter, acting as a biological warning system.

“In nature, this taste warns us against eating fats that have gone bad,” says Dr. Mattes. “But in low concentrations, much like the bitterness in coffee or the sourness in citrus, it adds a complex depth to food that makes it incredibly appealing to the human brain.”

Universal Distribution

Similar to the debunking of the “tongue map,” studies show that the receptors for Oleogustus are not confined to one area. They are distributed across the entire surface of the tongue. This means that the moment fat touches any part of the mouth, the brain receives a signal that high-energy nutrients are being consumed.

Combatting Obesity and Food Design

The discovery of Oleogustus has major implications for the food industry and public health. By understanding how the tongue perceives the taste of fat versus the texture of fat, scientists hope to create better fat substitutes.
